Typically my husband and I celebrate Thanksgiving with friends and have our own low carb Turkey Day over the weekend. This year is no different. This Thursday I will be eating more carbs than normal. But it is the holiday, so I’m not stressing over it. What I am stressing over is finding a low carb stuffing recipe to make on Saturday.

For the last few years I’ve tried different recipes, and they turned into disasters. The “bread” – made from almond OR hazelnut flours – always turned out too heavy, lumpy, or grainy. Also, it tasted like a mock stuffing. Not really what I was going for.

I’m beginning to think low carb stuffing is just a myth – an urban legend we low carbers spread from forum to forum. It’s as elusive as the sasquatch, or my husband’s clothes actually making it into the hamper…

After 3 years of disappointment, my 2015 Turkey Day menu didn’t include any stuffing. It was hard to give up the dream, and I tried to make peace with my decision. I told myself: “I’m eating low carb now. It’s so much healthier. I’m so much healthier. My food tastes great. Why pine for the unhealthy foods I used to make if it means lowering my standards?”

Well, that thinking lasted an afternoon. Give up? That’s just not me. So I hunted hither and thither, over hill and dale, for different ideas to try. Thankfully, I came across a recipe from the trusty Keto Diet Blog.

Actually, it’s two recipes in one – Sourdough Keto Baguettes and Keto Primal Thanksgiving Stuffing.

Both recipes seem simple, and the blogger’s photos sold me. It looks like real bread and stuffing. Yes, the “bread” includes almond flour, but it also has flaxmeal and coconut flour, which I have yet to bake with.

What really gave me to confidence to try these recipes was the use of psyillium husk and baking soda to make the baguettes. I use both ingredients when making oopsie bread, to great results. Both give the egg and cream cheese mixture a more bread-like texture.

So, I’m not giving up. Turkey Day isn’t Turkey Day without stuffing. One day I’ll hit upon the perfect low carb stuffing. Maybe it’ll be this year? If not, there’s always next year, and the next, and the next…

The dream isn’t over until this thinner lady sings.
